Almond Milk

Benefits of Almond Milk

Make Almond Milk At Home!  
It is easy to make, refreshing, and tastes great!

Ingredients:
-1.5 cups almonds
-5 cups water
-3 dates (optional)

Directions:
Soak almonds for 8-12 hours.

Rinse almonds thoroughly.

Blend almonds and dates (optional) in 5 cups of water.

Place nut milk bag over container or jar and pour into nut milk bag. 

Squeeze out all of the milk.

Chill and serve!

Berry Nutty Oatmeal

 Ingredients:

-2 cups rolled oats
-3-1/4 cups water
-Sweetener or sugar to taste (I used 2 packets of Sweet Leaf Natural Stevia Sweetener).  You can even try maple syrup or agave syrup. 
-1 teaspoon Cinnamon
-Almonds, blueberries, and raspberries for garnish 
*Add nut milk if you like your oatmeal a little creamier.   


Directions:

Bring the water to a boil.
Stir in the oats and lower the heat.  
Simmer uncovered, stirring occasionally, for about 5 minutes. 
Remove from heat and cover for 2 minutes.
Stir in sweetener and cinnamon. 
Garnish with berries and almonds. 
Serve and enjoy the goodness!!

Tropical Nice Cream


What's better than ice cream? Nice cream!  Made of 100% raw fruit.

Ingredients:
-1 young coconut (for the meat and the water)
-1 frozen banana
-1/2 cup frozen mango 
-1/2 cup frozen pineapple

Directions:

Crack open the coconut

Pour the water into a cup and scoop out the meat.

Place the meat, banana, mango, and pineapple in a blender.  
Pour in 1/4 cup coconut water and blend.  
Add a small amount of water at a time until you reach desired consistency. 

Be very careful not to add too much water. You don't want the nice cream to be runny. 

Serve back in coconut shell or bowl.

Tofu Scramble

This is super easy to make and so yummy and healthy! 

Ingredients:
-1 package of extra firm tofu, drained 
-1/2 yellow onion, diced 
-1/2 green bell pepper, diced 
-handful of cherry tomatoes, chopped 
-1/2 teaspoon garlic, diced 
-1/4 teaspoon turmeric 
-1/4 teaspoon cayenne pepper 

Directions:

Sauté onions and garlic on medium heat until onions are translucent. Adding 1 Tablespoon at a time if onions start sticking.
Add bell pepper and tofu and with one of your utensils, roughly crush the tofu. 
Add tomatoes, turmeric, and cayenne. 
Cook until tofu starts getting a little brown. 

Enjoy with toast or in a burrito.

OPTIONAL ADDITIONS: Daiya Shreds, Kale, Beans, Potatoes, and Salsa!

Pumpkin Spice Oatmeal

Ingredients:
-1 cup unsweetened soy milk (or your favorite unsweetened nondairy milk)
-3/4 cup oats
-1/4 cup pureed pumpkin
-1T +1t packed brown sugar
-1/2 teaspoon pumpkin spice

Directions:

Boil milk.  Add oats to milk.
 
Just before oats are done, add remaining ingredients.
Serve and top with pumpkin seeds.

Pineapple Bowl

This Pineapple Bowl is SO simple!

Ingredients:
-1/2 pineapple
-1 banana
-5 strawberries
-Coconut cream (as much as you like)

Directions:

Place coconut cream in the fridge overnight.
When ready to use, place the coconut cream in a blender until creamy.
Scoop out the pineapple.  Careful not to cut through the outside of the pineapple or the coconut cream will leak through.
Slice the pineapple that was scooped out.
Slice the banana and strawberries.
Fill the pineapple half way with coconut cream and continue filling with the sliced fruit.

Enjoy for Breakfast, a snack, or dessert!

Chocolate Mint Smoothie



Ingredients:
-3/4 cup of your favorite nondairy milk
-3 frozen bananas
-2 teaspoons agave or 4 or 5 soaked dates (I used agave)
-3 Tablespoons raw cocoa powder
-A couple drops of mint extract (as desired)
-Cocoa nibs
-Mint leaves for garnish

Directions:


Blend all ingredients except cocoa nibs and mint leaves.  Pour in a glass, sprinkle cocoa nibs on top and garnish with mint leaves.
