Tofu Scramble

This is super easy to make and so yummy and healthy! 

Ingredients:
-1 package of extra firm tofu, drained 
-1/2 yellow onion, diced 
-1/2 green bell pepper, diced 
-handful of cherry tomatoes, chopped 
-1/2 teaspoon garlic, diced 
-1/4 teaspoon turmeric 
-1/4 teaspoon cayenne pepper 

Directions:

Sauté onions and garlic on medium heat until onions are translucent. Adding 1 Tablespoon at a time if onions start sticking.
Add bell pepper and tofu and with one of your utensils, roughly crush the tofu. 
Add tomatoes, turmeric, and cayenne. 
Cook until tofu starts getting a little brown. 

Enjoy with toast or in a burrito.

OPTIONAL ADDITIONS: Daiya Shreds, Kale, Beans, Potatoes, and Salsa!
