They'll never know it's vegan... Green Bean Casserole

 

Ingredients:
¼ cup vegan butter
¼ cup flour
1-1/2 cups vegetable broth
1 T soy sauce
½ t garlic powder
½ t onion powder
2 T vegetable oil
28 oz of French style green beans (Optional: Add another 14 oz can for a less saucy casserole)
3 oz of French-fried onions

Directions:

Preheat the oven to 350 degrees.

In a pan, melt the butter.

When butter is melted, add the flour.  

Next, add the vegetable broth, soy sauce, garlic powder, onion powder, and vegetable oil.  You may want to use less sodium options when available.  Stir until mixture thickens and remove from heat. 

Drain green beans as much as possible and place in casserole dish. 

Pour the mixture over the green beans and mix until evenly coated. (Optional: Add another 14 oz can if casserole is too saucy). 

Bake for 10 – 12 minutes.

Top with French-fried onions.

Bake for an additional 10 minutes.
