They'll never know it's vegan... Green Bean Casserole

 

Ingredients:
¼ cup vegan butter
¼ cup flour
1-1/2 cups vegetable broth
1 T soy sauce
½ t garlic powder
½ t onion powder
2 T vegetable oil
28 oz of French style green beans (Optional: Add another 14 oz can for a less saucy casserole)
3 oz of French-fried onions

Directions:

Preheat the oven to 350 degrees.

In a pan, melt the butter.

When butter is melted, add the flour.  

Next, add the vegetable broth, soy sauce, garlic powder, onion powder, and vegetable oil.  You may want to use less sodium options when available.  Stir until mixture thickens and remove from heat. 

Drain green beans as much as possible and place in casserole dish. 

Pour the mixture over the green beans and mix until evenly coated. (Optional: Add another 14 oz can if casserole is too saucy). 

Bake for 10 – 12 minutes.

Top with French-fried onions.

Bake for an additional 10 minutes.

Gingerbread Men Cookies






These gingerbread men are so yummy you will catch them all before they can run!

Ingredients:
-3 cups flour
-1 ½ t baking powder
-¾ t baking soda
-1 T cornstarch
-¼ t salt
-1 T ground ginger
-1 ¾ t ground cinnamon
-¼ t ground cloves
-¾ cup packed dark brown sugar
-3 T vegan butter
-3 T vegetable oil
-½ cup molasses
-2 t vanilla
-2 T water plus an additional 3-4 T additional water

Directions:

Preheat the oven to 375 degrees.

 Mix all of the ingredients together in a large bowl.  After mixing completely, the mix will be a little crumbly.  Add the additional 3-4 T water, 1 T at a time, until all ingredients form into dough.

The dough may be a little sticky so add a little flour until dough does not stick to fingers easily.  
Sprinkle flour on a surface.  

Taking 1/3 of the dough at a time, roll the dough out with a rolling pin until you have reached the desired thickness of the cookie.  Thinner cookies will be a little cruncher and thicker cookies will be softer (Also see step 8 for crunchy/soft cookies).


Cut out gingerbread men.

Grease a cookie sheet and place cookies about an inch apart.  

Cook for 7-10 minutes.  The longer you bake the cookies, the crunchier the cookies will be and the slower they can run (hehe).

9. Let cookies cool completely.

Vegan Egg-less Nog


Eggnog or “Egg-less Nog” is a traditional holiday beverage, also used to add holiday flare to a variety of foods and beverages.

Ingredients:
-3 cups original almond milk (Soy milk works well too.  Make sure to stick to original soy, to avoid making the Egg-less Nog too sweet.  Another option is to try Unsweetened Original.  Also, stick to milks that are thicker, such as Almond Breeze or Silk. Some brands are a little watery).
-4 T agave nectar
-2 T vanilla
-½ t nutmeg
-½ (3.4 oz) package of vanilla pudding (JELL-O vanilla pudding is vegan)

Directions:


 Pour milk into a large bowl.
 Add agave, vanilla, nutmeg, and pudding.
Whisk together and... Voila!


Options:

- Serve warm with a cinnamon stick to give it a hint of cinnamon
- Add to coffee for breakfast or dessert
- Add rum for a holiday cocktail
- Replace milk with Egg-less Nog in any food or beverage recipe, such as cakes or hot chocolate
- Add vegan ice cream to make an Egg-less Nog float
- Add a candy cane to children’s beverages
- Top your favorite beverage with vegan whipped cream (Soyatoo Soy Whip is a great vegan option) and sprinkle with cinnamon

Apple Cider


Apple cider is a holiday favorite for everyone and is so easy to make at home.  Making apple cider is also a great activity for children.

Ingredients:
Apples (3 Fuji, 1 Granny Smith, 3 Red Delicious, 3 McIntosh) but you can use any variety.  Adding more green apples will give the cider a tart taste and red apples will give the cider a sweeter taste.  You can also add some golden apples.  10 apples made about 6 cups.  

Common Spices (Optional):
Cloves
Nutmeg
Lemon peel
Orange peel
Cinnamon
Ginger
Brown sugar
Agave nectar
Maple syrup

Adult options:
Rum

Directions:


Clean the apples very well to get rid of any dirt or pesticides.
Core the apples.
Cut the apples into cubes.
In a food processor, process apples as much as possible.  Do not remove the skin.
Using cheesecloth:
 Option 1. Tie the cheesecloth to a cup, pushing the cheesecloth down into the cup a couple of inches to make room for the processed apples.  Place the processed apples into the cheesecloth and squeeze out the juice using a spoon (this method will take too long if making more than one glass).
 Option 2. Fill cheesecloth with processed apples and squeeze out the juice using your hand.

Children may enjoy juice at this point.  Add ice if desired.  Add cinnamon stick for decoration.

For hot apple cider, place juice in a pot and heat to desired temperature.  Heat with cinnamon stick if desired.


Common Spices (Optional)
Add a pinch, in any combination, of desired spices:
Ground cloves
Ground nutmeg
Lemon peel
Orange peel
Cinnamon stick or grounds
Ground ginger
Brown sugar
Agave nectar
Maple syrup
Rum

My favorite combinations:
- Boiled with cinnamon stick, no other spices added
- Cloves only
- Nutmeg only
- Cloves, nutmeg, boiled with cinnamon stick
- Rum with brown sugar on the rim
- In tart ciders: a hint of orange peel or agave nectar or maple syrup
